Gather the following ingredients: salt, curry leaves, mustard seeds, tamarind, toor dal, brinjal (eggplant), and sambhar powder.
After rinsing, pressure cook toor dal till tender. This is the sambhar's foundation.
While making the sambhar, chop the brinjal into cubes and soak them in water to stop them from browning.
Heat some oil in a pan and add the mustard seeds. Allow them to sputter for taste.
Curry leaves, chopped brinjal, and any other veggies should be added. Cook and soften them by sautéing them.
Add the salt, tamarind extract, sambhar powder, and cooked toor dal. Mix thoroughly to blend tastes.
Give the sambhar ten to fifteen minutes to simmer. Serve hot for a delicious supper with rice or idli.
