Start by gathering the essential vegetables like potatoes, carrots, peas, and bell peppers. Chop them into small pieces. Also, gather spices such as cumin, coriander powder, garam masala, ginger, garlic.
Boil potatoes, carrots, and peas until soft. Boiling would make it easy for you to mash your vegetables. Once boiled, drain the water and set them aside to cool down.
Once the vegetables are cooled, mash them thoroughly. You can use a potato masher or a fork to mash the vegetables until they are lump-free.
Now it's time to add some flavour. Add cumin powder, garam masala, coriander powder, red chili powder, and salt to the mashed vegetables.
To help bind the mixture, add a small amount of breadcrumbs or besan (gram flour). Bind the mixture until it's soft, make sure it's not too sticky or too dry.
Now that your mixture is ready, take small portions and shape them into patties or cylindrical kebabs.
Finally, cook your veg kebabs. You can either pan fry, grill them, or bake them in the oven. And serve them with green chutney or ketchup.
