To prepare this rich thai chicken curry you'll need boneless chicken, coconut milk, garlic, red chillies, sugar and lime juice.
Chop the chicken into bite-sized pieces and prepare the vegetables. Slice the onions and fresh chillies.
In a large pan, heat the vegetable oil over medium heat. Add the chicken pieces and sauté until they are browned on all sides.
Once the chicken is brown ,add the red curry paste, and sauté for a couple of minutes.
Pour in the coconut milk and a pinch of sugar. Let the curry simmer on medium heat for about 15-20 minutes.
Taste the curry and adjust the seasoning. If you want more spice, add chopped red chillies.
Once the curry is ready, garnish with freshly chopped coriander.
