Start by cutting your regular bread slices into squares or triangles. Toast or fry the bread slices until golden brown and crispy.
In a pan, boil sugar and water to prepare the sugar syrup. Add a few cardamom pods for extra flavor and cook until it reaches a one-thread consistency.
Simmer full-fat milk and reduce it by half. Add sugar and a pinch of cardamom powder. Keep stiring the milk until it thickens into a rich, creamy consistency.
Once your breads are thinly sliced, fry them until they are crisp and golden brown on both sides.
Once your breads are nice and crispy, soak them immediately in sugar syrup. Make sure you don't soak for a long time as they would turn soggy.
Place the soaked bread slices on a plate and generously pour the rabri over them.
Once your Shashi Tukda is all ready, garnish it with chopped nuts like almonds, pistachios, and cashews. Add a few strands of saffron on top to elevate the flavor.
