For a healthy raspberry crumble bar, you’ll need fresh or frozen raspberries, rolled oats, whole wheat flour, coconut oil (or olive oil), honey, and a pinch of salt.
In a small saucepan, cook the raspberries with a bit of honey, until you achieve a jam- like consistency. Once cooked, keep it aside.
In a large mixing bowl, combine rolled oats, whole wheat flour and a pinch of salt. Stir it in olive oil and honey to achieve that crumbly texture.
Press half of the crumble mixture into the bottom of the pan to form a solid crust layer. Use a spoon to evenly distribute the mixture.
Once the crust is in place, spread the raspberry filling evenly over it.
Layer it with the remaining crumble mixture over the raspberry filling, covering it as evenly as possible.
Bake the bars at 350°F (175°C) for 25-30 minutes, or until the topping is golden brown. Let the bars cool completely before cutting them into squares.
