Start by selecting fresh, firm onions. Red onions work best for pickles because of their mild flavour.
In a bowl, combine vinegar, water, and salt. Add sugar to balance the tanginess.
To enhance the flavor, introduce garlic cloves, ginger slices, or even a bay leaf into the mix.
Blanch the onions in boiling water for about 1-2 minutes and then transfer them into cold water.
In a clean glass jar, alternate layers of onions and your pickling spices.
Once your jar is packed with layers, seal it tightly and store it in a cool, dry place. Let it sit for at least 24 hours to marinate.
After a few days, your homemade onion pickles will be ready to enjoy!
