Start off by gathering ingredients such as carrots, cabbage, beans, bell peppers, spring onions, soya sauce and corn flour.
Heat 1-2 tbsp oil in a large pot and add chopped carrots, beans, cabbage, and bell peppers. Stir-fry on medium heat for 3-4 minutes.
Add the ginger-garlic paste and green chilies to the sautéed vegetables. Stir well and cook for another minute.
Add the vegetable or chicken broth to the pot. Stir in the soy sauce and vinegar.
Mix 2 tbsp of cornflour with a little water slowly add this mixture to the soup while stirring constantly.
Add salt, pepper, chili sauce, and any extra soy sauce to taste.
Pour the soup into bowls and garnish with fried noodles. Serve hot and enjoy!
