In a small bowl, dissolve gelatin in cold water and let it sit for a few minutes to bloom. This step is crucial for giving your mousse its airy texture.
In a separate bowl, whip the heavy cream and sugar until it softens. The whipped cream adds the mousse’s lightness and creamy texture.
Once the gelatin is dissolved, mix it with the strawberry puree. Stir gently to ensure the mixture is all smooth.
Carefully fold the whipped cream into the strawberry and gelatin mixture. Make sure to be gentle to maintain the airy texture.
