Noodles, Onions, Tomatoes, Capsicum, Mushroom (Any vegetable you like), Garlic, Ginger, Green Chilli, Soy Sauce, Salt and Pepper, Vegetable Stock Cube, Coriander and oil.
First, boil the water and cook the noodles according to package instructions and drain the excess water.
Mince the garlic and chop all the vegetables you want to add in your thukpa into small and thin pieces.
Take a pan and heat the oil and add the minced garlic in it and then add the ginger and chopped green chillies and sauté it until it’s cooked nicely.
Now add all your chopped vegetables in the pan and let it cook on the low flame for 10-15 minutes.
Now make the broth and add 3-4 cups of water in the pan along with vegetable stock cube and let it simmer.
Now add the boiled noodles and add salt and pepper according to your taste. You can also add red chilli if you want and let it simmer for 3-4 minutes.
Your delicious warm thukpa is ready. Serve and garnish it with chopped coriander and enjoy.
