In a bowl, take 1 cup of roasted peanuts (you can use store-bought roasted peanuts or roast them at home). Ensure they are unsalted for better control over seasoning.
Finely chop 1 small tomato, 1 small cucumber, and 1-2 tbsp onions (optional). Add them to the peanuts in the bowl.
Sprinkle 1/2 tsp chaat masala, 1/2 tsp cumin powder, 1/4 tsp red chili powder, and 1/4 tsp black salt over the peanuts and veggies. Stir well to mix the spices evenly.
Pour 1 tbsp tamarind chutney or lemon juice (for a fresher taste) over the mixture. Stir to combine all the ingredients, making sure the peanuts and veggies are well-coated with the chutneys and spices.
Add 1 tbsp chopped fresh coriander leaves for a burst of freshness and color. This will also add a nice herbal flavor to the chaat.
For an extra crunch, top with 1-2 tbsp sev (crispy chickpea noodles). This step is optional but gives the chaat a delightful texture.
