Coconut Rice is an easy and flavorful Asian rice dish made with fresh grated coconut, tempering spices, curry leaves and rice.

Ingredients

1 cup basmati rice, 1 cup coconut milk, 1 cup water, 1 tbsp coconut oil, salt to taste.

Rinse the rice

Wash the rice under cold water until it runs clear to remove excess starch.

Soak Rice

It is essential to give the rice grains a bit of a head start in the water absorption phrase.

Cook the rice

In a pan, combine coconut milk, water, and rice. Bring to a boil, reduce heat, and simmer covered until rice is tender and the liquid is absorbed.

Garnish

Fry cashews, curry leaves, and mustard seeds in coconut oil. Add them to the rice for a rich flavor and crunchy texture.
