How To Make A Healthy Burrito Bowl At Home

Ingredients:

1 cup brown rice,1 can black beans, 1 cup tofu, 1 bell pepper, 1 small red onion, 1 cup cherry tomatoes, 1/2 cup corn, 1 lime, Fresh coriander, 1/4 cup salsa 1/4 cup yoghurt, Salt, pepper, and chilli flakes to taste.

Cook the Rice or Quinoa:

Start by cooking the brown rice or quinoa according to the package instructions. Once cooked, fluff with a fork and set aside.

Prepare the Protein:

If using chicken, season it with a little salt, pepper, and chilli flakes, then cook in a frying pan until it's fully done. For a vegetarian option, cube the tofu and cook it in a pan until golden.

Saute the Vegetables:

In the same pan, add olive oil and saute the diced bell pepper and red onion until they are soft and slightly caramelised.

Heat the Beans and Corn:

In a small pot, warm the black beans and corn over medium heat. Season with a pinch of salt and pepper.

Assemble the Bowl:

Start by placing a portion of rice or quinoa at the bottom of each bowl. Then, layer on the sautéed vegetables, black beans, corn, and cooked chicken or tofu.

Add Fresh Toppings:

Top your burrito bowl with sliced avocado, cherry tomatoes, and a generous spoonful of salsa. Sprinkle with fresh coriander for a burst of flavour.
