Wash and cut okra into bite-sized pieces. Chop onions, tomatoes, and garlic; gather spices like cumin, coriander, turmeric, and garam masala.
In a pan, heat oil over medium heat. Add cumin seeds and let them sizzle until fragrant.
Add chopped onions and garlic to the pan. Sauté until the onions are golden brown.
Stir in turmeric, coriander, and cumin. Cook for a minute to release the spices’ flavors.
Add chopped tomatoes and cook until they break down and form a thick sauce.
Add the okra pieces to the pan. Stir well to coat with the spices and tomatoes. Cook uncovered until the okra is tender.
Sprinkle garam masala over the curry and stir. Let it cook for a few more minutes. Garnish with fresh coriander if desired and serve hot.
