Dice Vegetables

1. Dice Carrots, potatoes, beans, cauliflower, tomatoes, onion, garlic and ginger

Heat Pan, Add Oil

2. Next, heat oil/ghee as per your preference. Add whole jeera, and whole garam masalas --ilaichi, long, dalchini and let it crackle

Add Chopped Onion, Ginger, Garlic

3. Now, add chopped onion, ginger garlic, green chili and sauté. Add tomatoes and keep sauteing until the tomatoes are very soft

Add Masala Powder

4. Next, add haldi (optional), kashmiri red chilli powder, dhania powder, jeera powder, salt

Add Vegetables

5. Add the chopped vegetables and keep stirring so that the mixture does not cling to the bottom of the pot/pan/pressure cooker

Add Soaked Rice

6. Add soaked rice, frozen green peas and mix for few minutes with a soft hand

Put Water

7. Put double the amount of water in proportion to rice. If you have used 1 cup rice, then put 2 cups of water

Add Mint, Coriander Leaves

8. Add a bunch of mint and coriander leaves. Now cover the pan and let it cook till rice become soft and fluffy

Cover And Cook

9. If using pressure cooker, you will have to give it two full whistles

Remove From Heat Once Cooked

10. Remove the steam from cooker. If using pan, cook on high till rice water dries, then cook for 5 minutes on sim. Your pulao is ready
