Take 1 cup sesame seeds, 1/2 cup sesame seed powder, 1/8 tsp sea salt, 1/2 cup ice syrup, 3/4 cup honey, 1/2 cup sugar, 2 tbsp water.
Heat a skillet, sauté sesame seeds, then cook sugar, water, honey, and rice syrup in a separate pot.
Heat oil in a pan, stir until boiling, remove from heat, cool slightly, and blend sesame seeds into a smooth paste.
Mix sesame seed powder, honey syrup, and sea salt in a bowl to create a cohesive, play-dough-like mixture with a lumpy texture.
Shape dough into a ball, insert a bar to elevate moulds, and gently press into each cavity, filling to the top and level with the frame.
Fill moulds, remove spacer, press upper frame downward, allowing cookies to protrude, allowing removal and gentle removal of cookies from the mould.
