Prepare spinach by boiling water and 1/2 tsp salt, then blanching it for 1 minute. Drain, rinse, and squeeze excess water. In a separate bowl, mix garlic, salt, sesame oil, and Dasida powder. Set aside for later use.
Cook eggs in a frying pan over medium-high heat, covering the bottom with avocado oil. Allow to color and firm, then cut into strips and set aside.
Stir fry Spam strips in a frying pan with additional oil, cook for 5 minutes, remove, and set aside.
Add more oil to a frying pan and add long cucumber strips. Cook for approximately 5 minutes.
Add more oil to a frying pan and add long carrot strips. Cook for approximately 5 minutes.
Mix cooked white rice with salt and sesame oil, let it cool, and wrap it in kimbap. Warm rice is acceptable but avoid using hot rice.
The first kimbap roll is prepared by spreading rice on a sushi nori sheet, then adding ingredients at one end. Enjoy your Gimbap.
