Step 1

Soak cashew nuts in hot water for about 10 minutes.

Step 2

Grind together coconut, green chili, cashews and cumin seeds into a smooth paste, adding a little water.

Step 3

In a pot, add pumpkin, carrot, beans, and raw banana along with water and salt.

Step 4

Cook the veggies until they are soft enough.

Step 5

Add the prepared paste to the veggies and cook for 2 more minutes.

Step 6

Turn off the heat, then add yogurt, curry leaves and coconut oil.

Step 7

Mix everything and your Aviyal is ready!
