Step 1

In a pan, melt the ghee on low heat. Once melted, add the whole wheat flour.

Stir the flour continuously, roasting it until it turns golden brown and releases a nutty aroma (about 8-10 minutes).

Once roasted, add the grated jaggery (or sugar) and mix well until it melts and combines with the flour.

Step 4

Add the chopped nuts, raisins, cardamom powder, and a pinch of salt. Mix everything thoroughly.

Step 5

Remove the mixture from heat and let it cool slightly, just enough to handle.

Step 6

Grease your hands with a little ghee and take small portions of the mixture. Shape them into small round balls or flat discs.

Step 7

Allow the pinnis to cool completely and set. Store them in an airtight container and enjoy this delicious treat throughout the winter!
