This is a simple and healthy recipe for the winters. The key ingredients of this soup are pumpkins, garlic and black pepper – which makes it a delightful winter treat!

INGREDIENTS:


Pumpkin (200 grams) 


1 tablespoon olive oil 


2 cups water  or vegetable stock


1/4 teaspoon freshly ground black pepper 


2 cloves garlic


1 tablespoon olive oil 


Salt to taste


100 ml cream


METHOD:


Either cook the pumpkins or roast them, after that heat a teaspoon of oil in a pan.


Stir fry the garlic and add the pumpkins till they are soft and tender.


Now, in a mixer make a paste of the the cooked pumpkin. Keep aside.


Add the ingredients to the blender and blend till it becomes smooth.


When ready to be served bring the pumpkin soup to quick boil.


Pour it in a bowl sprinkled with crushed black pepper.


Garnish with coriander leaves and serve hot.
