Penne with Celery-Almond Sauce
Penne with a creamy mustard, celery and almond sauce.
Preparation Time :10 mins.
Serves/Makes : Serves 4. Ingredients 3 cups cooked penne
For the sauce
1 large onion, sliced
1/2 cup celery, sliced
2 teaspoons plain flour (maida)
2 cups milk
1/4 cup cream
1/2 cup grated cheese
1/4 cup chopped almonds, toasted
3/4 teaspoon French style mustard
3 tablespoons butter
salt to taste
pepper to taste
For the sauce
1. Heat the butter and saute the onion and celery for a few minutes.
2. Add the flour, mix well and stir for 1 minute.
3. Gradually add the milk, mixing well so that lumps do not form.
4. Add the cream, cheese, almonds, mustard, salt and pepper, mix well and allow it to simmer for 3 to 4 minutes.
5. Remove form the fire and keep warm.
How to proceed
1. Toss the penne into the sauce just before serving and mix well.
2. Serve hot
