INGREDIENTS:


10-12 nos - brinjal/eggplant


Oil for frying


1 tsp – cumin seed


1 tbsp – ginger (chopped)


½ tsp - garam Masala


2 tsp - Salt


1 tsp - chilli powder


½ cup - finely chopped tomatoes


2 tsp - coriander powder


1 tbsp - sugar


1 tsp - vinegar


¼ cup - green coriander


1 cup – tomato puree


METHOD:


Properly wash, wipe the baigan


After washing, slit them


In a pan, heat oil and fry the baingan until they become slightly soft. Then keep aside.


In another pan, take ¼ cup oil and add cumin seeds and ginger. Saute till the colour changes to brown.


Now add tomatoes, tomato puree, coriander powder, haldi powder, garam masala, chilli powder, salt, little bit of sugar and vinegar to this mixture


Now add the fried baingan to this mixture. Cook for about 5 minutes.


Add hara dhania to garnish the item. Serve with rice or rotis.
