Halloween Menu: Spooky dishes to make this year`s party a little more fun, recipes inside
Halloween is here and thus, here are few recipes which are scary enough and delicious as well. The recipe is curated by Gunjit Singh Chawla who is a corporate chef at Independence Brewing Co.
Halloween 2022: It is that time of the year when people start looking for the costumes that can scare others off and pumpkin carving becomes important rather than making Kaddu ki sabzi from it. Yes, it is Halloween and here are some recipes which are perfect for your friends and family to relish together and giggle over.
Black widow burger with smoked bacon and cheese
Ingredients
- 180 gm fresh ground beef mince
- 1 tablespoon butter
- salt and freshly ground black pepper
- charcoal burger bun
- 4 crisp slices bacon
- 3 slice yellow cheddar
- 8 slices tomatoes, 2 gm rosemerry , 15 gm eine glazed onion
- Mustard mayo
- Chipotle mayo for dip
- lettuce lolo rosso
Method
Step 1- Make the patties
Form the ground meat into 2 equal-size patties. You want your patties to be about 90 gm each . Sprinkle the outside of the patties with salt and pepper..
Step 2- Heat
Melt your butter in a cast-iron skillet. You are going to be on medium-high heat so expect some smoke and splatter. Don't forget to turn your fan on.Once the pan is hot, add the patties. Cook for 4 minutes.
Step 3- Flip
Flip the patties and cook for 5 to 6 more minutes for medium-rare. Cook longer for your desired temperature. Do not move around or smash down the burgers.
At this point, add your wine glazed onion crispy bacon and cheese to allow it to melt.
Step 4 - Assemble
Toast the charcoal burger bun and spread butter on surface then spread mustard mayo on both sides,then place lettuce sequent and place 4slice of tomatoes place your cheesy tenderloin patty then apply for same method in second stage close burger bun heyyyyy your black widow burger is ready
Serve with fries and chipotle mayo!!!!!!!!!
Halloween steak bites with blood red chilli jus recipe
Tenderloin steaks ingredients
Butter – salted or unsalted
Olive Oil – it has a lower smoking point than butter keeping the butter from burning.
Salt and pepper – I like Kosher salt and cracked black pepper
Herb Butter – make the one in this recipe using butter, garlic, thyme
Method
STEP 1: Pat steaks dry, Cut into bite size and season steaks on both sides with salt and pepper. Be generous! They’re thick and need lots of seasoning with herbs . You can use steak seasoning if you’d like, but Kosher salt and pepper really are the BEST.
STEP 2: Heat skillet over medium medium-high heat. add butter and olive oil.
STEP 3: Add steaks. Cook for 2 minutes on each side spooning butter over steaks while they cook.
STEP 4: Flip steaks bites. Cook for 2 more minutes spooning butter over steaks bites . It would taste nice when medium done.
STEP 6: Rest steaks bites for 5 mins.
Blood red chilli jus
Ingredients
2 tsp olive oil
2 shallots, finely chopped
50ml port
50ml red wine
1 rosemary sprig
1 bay leaf
200ml brown Jus ( Demi glaze)
2 tbsp butter, red smoke paprika 100 gm
Step 1
Put the olive oil in a large frying pan over a medium heat and fry the shallots until caramelised.
STEP 2
Add the port, wine , deglaze it and add herbs and simmer for 10 mins, or until reduced by half.
STEP 3
Pour in the stock and continue to cook until reduced by half again, then strain, discarding the shallots and herbs.
STEP 4
Transfer the sauce into a new pan and bring to the boil. Remove from the heat and whisk in the butter, then season to taste.
Assemble
Toss our little steak bites in some jus, then some charred brocolli and roasted bell pepper set on side.
