Bafla is the special bread of Madhya Pradesh. Cooked in loads of ghee, it is a regional variation of the Rajasthani Baati.Ingredients:
2 cups Whole-grain wheat Flour (Atta)
1/8 tsp salt
1 cup melted ghee
1/2 cup warm water
Melted ghee for rolling.
Procedure:
Mix salt and flour.
Cut-in Ghee to resemble crumbles.
Gather flour to make a mound with a well in it. Add warm water and start mixing dough and knead.
Gather dough in to a ball. Cover with damp kitchen towel or a plastic film. Let it rest for about one hour at room temperature.
Pinch enough dough to make a ball of about 1½" diameter. Slightly flatten it. Brush the exterior with melted Ghee.
Bring a pot of salted water to a boil. (½ teaspoon of salt to 2 quarts of water).
Put the bread in water. Return to boil. Turn down heat to simmer. Cook about 30 minutes.
Drain the bread in a colander.
Fry till exterior is hard crusty brown.
