Father's day special recipe: Lemon cupcake

Ingredients
Sponge
- 100 gms unsalted butter softened
- 100 gms flour
- 100 gms golden caster sugar superfine is best
- Zest of 1 lemon or 2 tsp lemon juice
- 2 medium eggs
- 1 tsp baking powder
Frosting
- 75 gms unsalted butter - softened
- 175 gms icing sugar
- 2 tsp lemon juice
- zest of one lemon
Method:
- Preheat the oven to 180ºC
- Cream the butter and sugar together in a mixing bowl till it is light and fluffy. Mix in the lemon zest/ lemon juice.
- Add the eggs to the mix, one by one and carefully fold in the flour. Add the baking powder at this point.
- Place cupcake cases into the baking tray and fill each with about 1½ tablespoons of cupcake mixture.
- After 10 minutes of baking, check your cupcakes by inserting a cocktail stick into one of the cupcakes. If it comes out dry then the cupcakes are done. If not, then back in the oven for a few minutes more. Lift the cupcakes out of the muffin tin and leave to cool.
Frosting:
- Cream the butter after until it's light and fluffy.
- Sift the icing sugar and add it gradually to the butter.
- Mix in lemon zest and lemon juice for the lemony zing.
