Nagas` special Christmas delicacies

Try out this authentic NE nagas` simple, easy to make, special cuisine.

Recipe: Red Chilli pork ribs-

Ingredients-

-1 kg pork ribs cut into small pieces
-2 medium size sliced potatoes
-1 tablespoon chilli powder
-1 garlic clove
-2 teaspoon grated ginger
-1 chopped onion
-a bit of coriander leaves
-Salt to taste

Procedure-

-Place the washed pork in a deep saucepan. Add chilli powder, salt and stir it continuously for 15 minutes in full flame.
- Now add 2 glasses of water and cover the lid and cook in full flame for 40 minutes.
-Put potatoes, garlic, onion, ginger paste and cook for another 15 minutes.
-Mash the potatoes and put the pork in a bowl with coriander leaves on top.

Recipe: Chicken bamboo shoot-

Ingredients-

-1 kg whole chicken
-1 cup of bamboo shoot (fresh/ dried)
-1 garlic clove
-1/2 cup of chopped ginger and spring onion
-5-6 fresh green chillies
-2 small tomatoes
-2 medium size slice potatoes
-Salt

Procedure-

-Boil the chicken meat with 3 glasses of water and sprinkle salt in a saucepan for 30 minutes.
-Put sliced tomatoes, potatoes, bamboo shoot, ginger and garlic paste and cook for 15 minutes.
-Now add spring onions and green chillies and steam it for another 5 minutes.
-Put the simple chicken gravy in a ceramic dish and serve it hot.

Recipe: Fried beef sizzlers-

Ingredients-

-1 kg boneless chopped beef meat
-3 tablespoon oil
-250 g green beans, 2 mashed tomatoes
-1 garlic clove (minced)
-1 chopped onion
-2 teaspoon of ginger
-1/2 teaspoon each of cumin and coriander powder
-2 teaspoon red chilli powder
-1/3 teaspoon turmeric powder

Procedure-

-First cook the boneless meat in an air tight saucepan for 40-45 minutes with 2 glasses of water.
-Set aside the cooked meat.
-Fry the garlic, onion and ginger paste in a non-stick pan until it turns golden brown.
-Add chilli and turmeric powder and stir them for a while
-Now put the chopped green beans, mashed tomatoes, cumin and coriander powder in the pan. Mix it well and fry them until the beans are tender.
-Drain the cooked meat and put it in the fried veg mixture and fry them for another 10 minutes.
-Serve it on a platter with onion rings on all edges.

Recipe: Potatoes chutney with fermented fish-

Ingredients-

-3 medium size boiled potatoes
-250 g celery
-1 Naga Jolokia (Raja Mircha)
-3 small pieces of roasted fermented fish
-3-4 pieces of garlic
-1 chopped onion
-A bit of coriander leaves
-Salt

Procedure-

-Smash the Raja mirchi, garlic with salt in a wooden bowl.
-Add the fermented roasted fish with 2 teaspoon of water and mix them well.
-Now put the celery leaves in hot boiled water and set aside for 2, 3 minutes. Drain it and put in a bowl.
-Mix all the ingredients along with the smashed potatoes in a bowl.
-Spread fresh cut onion pieces and coriander leaves on top.
